On the food related matters, I’ve finally put together a very short video clip of the vegan food we had at the 2-starred Michelin restaurant in Singapore.

This was at Saint Pierre, in Singapore.

My fellow coursemate at Food Future Institute had recommended the restaurant.

And then I found out that the chef-owner was Chef Emmanuel Stroobant, and I had attended his workshop at the Singapore Vegan Festival some time ago.

He’s vegetarian, so I figured he would know how to make vegetables taste good! Sometimes when you go to a Michelin-starred restaurant and request for vegan food… you realise the stars are for the non-vegan food, not the vegan options.

This is what we had:
We opted for the vegan 4-course menu at SGD228 although I was so very tempted to go for the tasting menu. You get a first starter, second starter, main course and choice of dessert although it did feel like more as there were the canapes as well as a complimentary birthday cake.

CANAPE

cauliflower, shiso, umeboshi purple cauliflower, verjus, yuzu turmeric, shallot, curry shimeji mushroom, miso, sudachi

GERMAN KOHLRABI

german kohlrabi, shiro kombu, kimchi

BRITTANY PURPLE ARTICHOKE

brittany purple artichoke, yuzu kosho, celery

SHOGOIN DAIKON

shogoin daikon, black winter truffle, dashi

TULAMEEN RASPBERRY

tulameen raspberry, baba, lemongrass

araguani chocolate, cashew nuts, szechuan peppercorn

Had such a pleasant surprise when Chef Emmanuel himself came out and presented me with an autographed copy of his print cookbook! We had such a nice chat too.

Maybe next time we’ll come back for the tasting menu if we’re ever back in Singapore again.

I have to say the view was breathtaking and the service was impeccable.
