On Monday I was at Lotus's Hypermarket and they were selling cempedak so I had to get some. Hmmm... I thought I had taken a pix of the cempedak but looks like I've accidentally deleted it from my phone.

Cempedak is a tropical fruit native to Southeast Asia, closely related to jackfruit and breadfruit, known for its strong, sweet aroma and distinctive, often custardy or fibrous yellow-orange flesh.

Of course, I had to turn it into ice cream with my Ninja Creami!

WFPB Cempedak Ice Cream

INGREDIENTS

3/4 cup cempedak
3/4 cup plant-based milk (¾ cup water + 3 tablespoons cashews)
1/4 cup mashed steam white sweet potato, 70g (I used Indonesian cilembu)

12 Mazafati dates (½ cup + 2 tablespoons dates, pitted)
1/2 teaspoon My Blue Tea pandan leaf powder

1/4 teaspoon Organicule ginger powder

METHOD

Soak cashews in water for 2 hours. Rinse twice and drain. Add cashews and remaining ingredients into a blender and blend till smooth. Pour mixture into Ninja Creami pint and freeze for 24 hours. Use Light Ice Cream mode to churn the ice cream. Tada, cempedak ice cream!

It turned out soooo goood. I'm extremely happy with it!
