I didn’t quite understand why someone would wanna combine cabbage inside a mashed potato dish…

BUT…

…when I made it yesterday, I was pleasantly surprised how good it tasted!

This was another one of my recipe submissions for D’Vegan Academy.

It’s submission NUMBER 10!!

Which means I have 30 more recipes to make for the 2025 challenge which end on 31 December.

Here’s the recipe that I noted down:
Mashed Potatoes with Cabbage (cooked vegan)

1.5 cup potato

1 cup cabbage, shredded

1 leek stalk, finely chopped

Pinch Nutmeg powder

Black Pepper
Salt

½ cup Plant-based milk

½ T Plant-based butter

1/2 cup vegetable stock or hot water + mushroom seasoning

METHOD

Boil water in pan. Add salt. Add cabbage. Cook for 2 minutes. Strain water.

Add vegetable stock, potato, leeks, plant-based milk, salt. Cook till liquid is reduced.

Add cabbage. Mash.

Add ½ T butter.

Add nutmeg powder.

Flavour with black pepper.
