As you may already know, I’ve been busy in the kitchen working on my upcoming Raw Vegan Ice Cream eBook. I think I’m going to call it the Ninja Creami Copycats. Or maybe just Creami Copycats.

My goal? To create "copycat" versions of the most iconic flavors from brands like Ben & Jerry’s, Baskin Robbins, and Häagen-Dazs.

Today, I wanted to share my journey with a classic: Häagen-Dazs Key Lime Pie Ice Cream.

The original is described as a creamy, sweet, and tangy lime ice cream swirled with a crunchy graham cracker ripple.

The Reality Check: My first test wasn’t up to my standard. The ice cream was way too soft and a little sticky (I think I went overboard on the pine nuts). I went back to the drawing board, swapped cashews for macadamias, and used dates instead of coconut sugar in the crumble.

The result? I’m finally satisfied!

Here’s a sneak peek at the final "Copycat" build:

The Base: Water, pine nuts, avocado, dried white mulberries, fresh lime juice/zest, vanilla, miso, and white chia powder.
The Graham Cracker Bits: Oats, cinnamon, macadamia, dates, vanilla, nutritional yeast, miso, and water.
