I’ve decided to take part in the D’VEGAN ACADEMY 2025 challenge!

This is a Malaysian online vegan academy which I enrolled in since 2021. To participate, I need to make 40 dishes from the academy.

So I made 2 recipes the other day…

INGREDIENTS

600g tomato
200g carrot

100g onion

100g celery

white bits of spring onion

1 clove garlic

Peppercorn

Parsley

Thyme

1 Bay leaf

INGREDIENTS:
½ cup dried chickpeas - soak & cook in advance with a bit of turmeric powder

¼ cup dried yellow split peas

¼ cup dried red lentils

5 dried red chillies

½ teaspoon coriander seeds

½ teaspoon black peppercorns

½ teaspoon cumin

(or you can use rasam powder)

1-2 cups homemade tomato sauce

½ white onion

½ red chili

½ green chili

1 clove garlic

½ inch ginger

½ green bell pepper (but I used one red bell pepper)

½ tomato

Coriander leaves

Spinach
