This might be the last recipe I try from Deliciously Ella's cookbook coz after this I'm taking part in the D'Vegan Academy challenge and will be making Chef Dave's recipes instead.

🍅CHUNKY ITALIAN SOUP (cooked vegan) 🍅
Making this for Mr Jazz Guitarist.

Trying out a recipe by Deliciously Ella from her book Quick & Easy

INGREDIENTS

olive oil ~ used water instead

1 onion, finely diced

2 garlic cloves, finely diced

3 small carrots, quartered lengthways and finely diced

2 celery stalks, quartered lengthways and finely diced

1 tablespoon dried mixed herbs

1 tablespoon dried oregano

2 courgettes, chopped into bite-sized chunks ~ used orange sweet potato instead

4 large vine tomatoes, chopped into bite-sized chunks 2 tablespoons tomato purée

1 tablespoon balsamic vinegar

1 tablespoon apple cider vinegar

1 vegetable stock cube ~omitted

1 × 400g tin of plum tomatoes ~ used 2 large fresh tomatoes instead that’s all I had

500ml boiling water

handful of basil, roughly chopped ~used daun limau purut

salt and pepper
